I remember Grandma making us cabbage rolls when she’d come to visit. An old-fashioned, homey Southern classic, cabbage rolls are typically stuffed with a filling of ground meat and rice, and then baked in a tomato sauce—delicious by all accounts. I’ve recently fallen in love with roasted red cabbage wedges, though, and it has become a standard side dish in my house, pleasing both my husband and kids alike. They become caramelized and deeply flavorful (the cabbage wedges, not my husband and kids), as is the case with most produce when roasted.
These roasted cabbage wedges are kind of like a cross between those classic baked cabbage rolls and a wedge salad—with an Asian twist. My love for coconut milk runs deep, and it nicely supports the sweetness of the roasted peppers in this simple, two-ingredient sauce. An unexpected side dish that will bring a burst of vibrant colors to your winter table, these roasted cabbage wedges are downright addicting, so don’t say I didn’t warn you.
